In honor of National Pancake Day, I am posting two pancake recipes in a row! Remember last week, when I told you about my Confetti Cake Pancakes that totally started out healthy but then morphed? Well, these pancakes totally make up for last weekend’s unhealthy pancakes and they are equally yummy!
The greenish hue comes not from artificial food coloring, but instead from a touch of spinach juice, which I promise you can’t taste at all. Could they be greener? Totally. And for St. Patty’s Day, you might want to use a touch of green food coloring. But, I don’t like to use artificial colors and I am okay with just a greenish hue as opposed to an outright green pancake. Totally up to you.
To make the shamrock shape, simply use a tablespoon to spoon three circles onto your skillet or griddle, in very close proximity. The circles will morph together on their own, but you can shape them with your spoon. The batter is relatively thick which makes it easy to handle and shape. I promise, if I can do it so can you.
Green or not, shamrock or not, this recipe is perfect for National Pancake Day and St. Patty’s Day, but healthy enough for every day!
Happy National Pancake Day!
- 2 c. (246 g) whole wheat flour
- 1 scoop vanilla protein powder
- 2 t. baking powder
- ½ t. baking soda
- ½ t. salt
- ¾ t. ground cinnamon
- 1 c. plain Greek yogurt
- 1½ c. milk (I always use Almond)
- ¼ c. coconut sugar, brown sugar, or maple syrup
- 2 large eggs
- 3 T. melted coconut oil (or butter)
- 1 c. spinach, juiced*
- In a large bowl, combine the dry ingredients.
- In a separate bowl, whisk the yogurt, milk, sugar, and eggs. Add the coconut oil.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not over-mix.
- Heat a griddle or cast iron skillet over medium heat. Melt coconut oil and use a pastry brush to evenly distribute. Using a tablespoon, spoon three small circles in close proximity, forming a shamrock shape. Form a stem.
- Cook until bubbles start to form on the surface. Flip and cook until the other side is just done.
- Serve with maple syrup, fruit, or more yogurt.
